These Chocolate Peanut Butter Crunch Bars are an easy no-bake dessert made with a creamy peanut butter base, crispy Rice Krispies, and a rich chocolate topping. The combination of salty-sweet peanut butter, crunchy cereal, and smooth milk chocolate makes these bars especially satisfying.
The recipe requires no conventional baking and comes together with just a few simple ingredients. The hardest part is waiting for the bars to chill and set properly!
Ingredients
For the Peanut Butter Crunch Base
- 1 cup (226g) unsalted butter, melted
- 1½ cups (375g) peanut butter, creamy or crunchy
- 2 cups (240g) icing sugar, sifted
- 4 cups (112g) Rice Krispies cereal
- 1 teaspoon vanilla extract
For the Chocolate Topping
- 1½ cups (255g) milk chocolate chips
- ½ cup (125g) peanut butter
- ½ cup (85g) mini chocolate chips
Equipment
You will need:
- A 9×13-inch baking pan
- Parchment paper
- A large microwave-safe mixing bowl
- A second microwave-safe bowl
- A spatula or wooden spoon
- A sharp knife
- A cutting board
Instructions
1. Prepare the Baking Pan
Begin by preparing your baking pan before making the peanut butter mixture. A 9×13-inch pan works well for creating bars with a moderate thickness. If you prefer taller, thicker bars, an 8×8-inch pan can be used instead.
Line the entire pan with parchment paper. Allow some parchment to extend over two or more sides of the pan. These extra edges will act as handles later, making it much easier to remove the chilled dessert in one piece.
Press the parchment into the corners as neatly as possible and set the prepared pan aside.
2. Melt the Butter
Place the 1 cup of unsalted butter into a large microwave-safe bowl.
Heat the butter at medium power in approximately 30-second intervals. Stir between each interval so the butter melts evenly.
Continue until the butter has completely liquefied. Avoid allowing it to become extremely hot or boil.
Once melted, let the butter stand for about 1 minute. Slightly cooling it before adding the peanut butter helps prevent the mixture from becoming unnecessarily hot.
3. Mix the Peanut Butter and Vanilla
Add 1½ cups of peanut butter to the melted butter.
Using a spatula or wooden spoon, stir the two ingredients together until they form a smooth, consistent mixture. If you are using crunchy peanut butter, small peanut pieces will remain throughout the base, adding extra texture.
Next, add 1 teaspoon of vanilla extract and stir thoroughly.
The mixture should look glossy and evenly blended, with no visible pools of melted butter around the edges.
4. Incorporate the Icing Sugar
Measure 2 cups of sifted icing sugar.
Gradually add the sugar to the peanut butter mixture rather than adding everything at once. Stir well after each addition.
As the sugar blends into the butter and peanut butter, the mixture will become noticeably thicker. Continue mixing until all of the icing sugar has been incorporated.
Run your spatula around the bottom and sides of the bowl to make sure there are no pockets of dry sugar remaining.
At this point, the mixture should be thick, smooth, and suitable for coating the cereal.
5. Add the Rice Krispies
Pour 4 cups of Rice Krispies cereal into the peanut butter mixture.
Use a large spatula to gently fold the cereal into the mixture. Work carefully because stirring too aggressively can crush the cereal and reduce the crunchy texture that makes these bars distinctive.
Continue folding until the cereal is evenly distributed and coated with the peanut butter mixture.
Make sure there are no large areas of dry cereal remaining.
6. Form the Base
Transfer the mixture into your parchment-lined baking pan.
Spread it across the pan using a spatula. Once it is roughly distributed, use the flat bottom of a measuring cup, glass, or clean spatula to press the mixture down firmly.
Pay particular attention to the corners. A compact, level base will make the finished bars easier to slice.
Do not press so aggressively that all of the cereal is crushed. Use enough pressure to hold the mixture together while preserving as much crunch as possible.
Place the pan in the refrigerator while preparing the chocolate layer.
7. Make the Chocolate Peanut Butter Topping
Place 1½ cups of milk chocolate chips and ½ cup of peanut butter into a clean microwave-safe bowl.
Heat the mixture at medium power in 30-second intervals, stirring thoroughly after each interval.
Continue until the chocolate has melted and the peanut butter has blended into it completely.
The finished topping should be smooth, shiny, and easy to spread. If a few chocolate pieces remain, keep stirring rather than immediately increasing the heat. The residual warmth will often melt them.
Allow the mixture to cool for approximately 1–2 minutes before using it.
8. Add the Chocolate Layer
Take the chilled peanut butter base out of the refrigerator.
Pour the melted chocolate-peanut butter mixture over the entire surface.
Use a spatula to gently spread the topping from the center toward the edges. Work carefully so you don’t disturb the cereal base underneath.
Try to create an even layer from corner to corner. A smooth chocolate surface will also make the finished bars look more polished.
9. Sprinkle With Mini Chocolate Chips
Before the chocolate topping begins to firm up, sprinkle ½ cup of mini chocolate chips evenly over the surface.
Distribute them from one side of the pan to the other so that the chocolate chips are spread throughout the finished dessert.
If desired, gently press the chips into the soft chocolate with your fingertips or the back of a spoon. This helps them stay attached after the topping becomes firm.
10. Chill the Bars
Place the pan back into the refrigerator.
Allow the bars to chill for at least 2–3 hours. For the cleanest results, make sure the chocolate layer is completely firm before attempting to cut the dessert.
Avoid cutting the bars while the chocolate is still soft. Doing so can cause the topping to smear and may make the peanut butter base separate.
11. Remove and Slice
Once the bars are fully chilled, use the parchment paper overhang to lift the entire slab from the pan.
Place it on a clean cutting board.
Using a sharp knife, divide the slab into bars or squares. You can make larger dessert bars or smaller bite-sized pieces depending on how you plan to serve them.
For particularly neat cuts, warm the knife slightly, wipe it clean, and repeat between slices.
12. Serve and Enjoy
Your Chocolate Peanut Butter Crunch Bars are now ready to serve.
The finished dessert should have a firm chocolate topping, a creamy peanut butter layer, and plenty of crisp cereal throughout the base. The mini chocolate chips provide additional chocolate flavor and a pleasant texture.
These bars are excellent for parties, family gatherings, lunchbox treats, afternoon snacks, or simple homemade desserts.
For the best texture, keep the finished bars in an airtight container in the refrigerator. Chilling helps them maintain their shape and keeps the chocolate topping firm.
Helpful Tips
- Use parchment paper: The overhanging parchment makes removing the finished bars much easier.
- Don’t overheat the chocolate: Gentle heating and frequent stirring produce a smoother topping.
- Keep the cereal crunchy: Fold the Rice Krispies gently rather than vigorously stirring them.
- Press the base evenly: A compact base prevents the bars from falling apart when sliced.
- Allow enough chilling time: The full 2–3 hours of refrigeration is important for achieving clean, sturdy bars.
- Choose your peanut butter: Creamy peanut butter gives a smoother texture, while crunchy peanut butter adds extra peanut pieces and texture.
- Cut when fully set: Waiting until the chocolate is firm will give you much cleaner-looking squares.
