Spinach & Cheese Puff Pastry Triangles

These golden, flaky spinach and cheese puff pastry triangles are a delicious savory snack that combines creamy cheeses with fresh spinach wrapped in buttery puff pastry. They are easy to prepare, look impressive when served, and make a perfect appetizer, tea-time treat, lunchbox snack, or party finger food. The combination of tangy feta, melted mozzarella, and lightly sautéed spinach creates a rich and flavorful filling, while the puff pastry bakes into crisp, flaky layers that everyone loves.

Ingredients

For the Filling

  • 2 cups fresh spinach, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella or cheddar cheese, grated
  • 2 tablespoons cream cheese (optional, for extra creaminess)
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

For the Pastry

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon sesame seeds or nigella seeds (optional)

Instructions

Step 1: Prepare the Spinach Filling

Heat the olive oil in a frying pan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to let it brown. Add the chopped spinach and sauté for 2–3 minutes, stirring occasionally, until the leaves have wilted and most of the moisture has evaporated.

Remove the pan from the heat and allow the spinach mixture to cool slightly. Transfer it to a mixing bowl and add the feta cheese, grated mozzarella or cheddar, and cream cheese if using. Mix everything together until well combined. Season with salt and freshly ground black pepper to taste. Set aside.

Step 2: Prepare the Puff Pastry

Lightly flour your work surface and gently roll out the thawed puff pastry sheet to smooth any folds. Cut the pastry into equal-sized squares or rectangles, depending on your preferred shape and size.

Step 3: Fill the Pastries

Place a spoonful of the spinach and cheese mixture in the center of each pastry piece. Avoid overfilling, as this can make sealing difficult and may cause the filling to leak during baking.

Step 4: Shape the Triangles

Fold each pastry square diagonally to create a triangle. Press the edges together firmly and seal them using the tines of a fork for a decorative finish. This helps keep the filling securely inside while baking.

Step 5: Add the Finishing Touches

Line a baking tray with parchment paper and arrange the prepared triangles on the tray, leaving some space between each one. Brush the tops with beaten egg to create a beautiful golden color. Sprinkle sesame seeds or nigella seeds over the pastries for added texture and flavor if desired.

Step 6: Bake

Preheat the oven to 180°C (350°F). Bake the pastries for 20–25 minutes, or until they are puffed, crisp, and beautifully golden brown. Baking times may vary slightly depending on your oven, so keep an eye on them during the final few minutes.

Step 7: Serve and Enjoy

Remove the pastries from the oven and allow them to cool for a few minutes before serving. Enjoy them warm as an appetizer, snack, light lunch, or alongside a fresh salad. They are equally delicious served with yogurt dip, garlic sauce, or a simple tomato chutney.

Tips for Success

  • Squeeze excess moisture from the spinach if needed to prevent a soggy filling.
  • For a stronger flavor, add a pinch of dried oregano, chili flakes, or nutmeg to the filling.
  • These pastries can be assembled in advance and refrigerated until ready to bake.
  • Leftovers can be stored in an airtight container and reheated in the oven to restore their crisp texture.

Yield

Makes approximately 8–10 puff pastry triangles, depending on the size of the pastry pieces.

These spinach and cheese puff pastry triangles are a simple yet elegant recipe that delivers a perfect balance of flaky pastry, creamy cheese, and nutritious spinach in every bite.
